菜煎餅為白面煎餅加菜餡煎烙而成。長方形，金黃色，有多而不膩，外酥里軟，餡鮮餅香
原料：白面煎餅（最好是小鏊子烙的），各種菜為主（白菜、菠菜、胡蘿卜、水蘿卜、南瓜、豆腐、土豆、粉條、薺菜……等等）總之放入自己喜歡吃的菜，也可以放入雞蛋，火腿腸，使之更加美味。
做法在各地有差異，但是大同小異！
做法：1.將你喜歡吃的菜放入拌碗或水勺內，放入食油（不要苛刻多了好吃哦）、味精、食鹽、孜然等調料，均勻攪拌。
2.將雞蛋均勻灑在鏊子上、形成比煎餅略小的圓形，將煎餅放到雞蛋上是雞蛋貼服在煎餅上。
3.將煎餅放到鏊子上雞蛋一面向上，把調好的菜倒到煎餅上烙，片刻後上面放上一個煎餅反過來再烙，到油黃為止為最佳。
4.好了之後，可以將兩邊向中間折疊形成長方形，便於手拿和食用，還不方便可以一分為二。
備註：菜煎餅適合趁熱當場食用，攜帶後會失去原味。美味的菜煎餅將使你留念棗庄，讓你成為棗庄人民的朋友。

綠豆煎餅

綠豆 150克、辣白菜 50克、豬肉 30克、蔥 20克、紅色柿子椒 15克、豬油 50克、精鹽 2克、胡椒面 1克、調料醬 20克

【製作過程】

1、將綠豆用水泡開，去皮後推水磨。

2、把辣白菜用水沖洗後切成細絲，把紅柿子椒粗糙地搗一下，把蔥斜切。

3、帶肥肉的豬肉煮熟後，一部分切成薄片，剩下的備用。

4、在粗磨的綠豆中放入辣白菜、豬肉絲、紅柿子椒、蔥、胡椒面、精鹽，做成煎餅漿

5、在燒熱的煎餅鍋里抹上豬油後，撈一大勺煎餅漿放入煎餅鍋里，攤成圓扁的形狀，中間放一個豬肉片，然後前後煎成金黃色即可。

6、將煎餅放到盤子里，與調料醬一起端出。

酸奶煎餅

1）酸奶180毫升（我用的酸奶是完全沒有甜味的），雞蛋2個，砂糖20克，鹽1/4小匙，香草精幾滴攪拌均勻，直到糖完全融化。
2）低粉（中筋麵粉）60克，泡打粉1/4小匙，混合均勻後篩入，攪拌均勻。
3）把調好的麵糊倒在量杯里了，目的是控制每個煎餅的用量，讓大小均勻。
4）鍋里用一小塊黃油塗一下，如果不沾鍋效果夠好就不要放油。
倒大約50毫升的麵糊進鍋里，不必搖晃。等看到煎餅最外邊一圈顏色變得有一點兒透明就可以翻面了。為了快，我一鍋做了3個。
5）做好的煎餅放涼。
6）煎餅上的Sauce口味隨意。
用了芝士（芝士100G + 蛋黃1個 + 糖30G + 檸檬皮末1/2匙，打發）、草莓、獼猴桃、超市買來的RUM口味的Sauce，最後還篩了一點點糖粉上去。
操練心得：
煎的時候可以用色拉油，要控制好油的量，不能多。
煎餅做多了就用保鮮膜包起來放進冰箱，吃之前加熱。
直接入口的食物，晾的時候注意衛生。
忘了說，以上材料可以做6個餅。

蔬菜煎餅

韭菜100克, 蝦皮適量, 鹽少量, 味精適量, 料酒少量, 胡椒粉少量,

1、韭菜、蝦皮剁碎，用鹽、味精、料酒和少許胡椒粉調成餡料。

3、煎鍋內熱油，把煎餅的雙面煎成金黃色，即可。

小米1000克，黃豆100克。
a．將小米、黃豆淘洗干凈。先把500克小米煮到七成熟時撈出，晾涼後與另500克生小米和黃豆一起上磨，加水 磨成米糊，盛到盆里使其稍微發酸。
b．煎餅鏊子燒熱（火要緩而均勻），左手盛一勺米糊倒在鏊子中央，右手用煎餅扒子盡快把米糊向順時針方向推開成畫餅形，這時再把攤好的麵糊用刀推勺後約用1分鍾即熟。用刮刀順邊颳起煎餅的邊緣，兩手提邊揭起，餅薄加紙，呈棕黃色，松軟筋道，微酸甜香。
